Alert Admin When All Available Agents Are On Active Calls
It would be nice to have a way to send an alert to admins when all available agents are on a call. This way, other agents not assigned to Talk can do other things and only hop on Talk when call volume is high.

I agree that would be a really handy feature.
Another thing you could look at in the meantime is perhaps signing up to the Real-time dashboard beta for Zendesk Explore. You can check it out here. You could potentially surface this real-time dashboard on a tv, or accessible to the admin so they can keep an eye on this.
I also assume you're probably using the inbuilt agent talk monitoring dashboard as well. Just in case, throwing this link in here for good measure as well.
