Here I share the way I came up with the solution to, for example, remove all single quotes (') from ticket title using Liquid:

{% assign ticketTitle = ticket.title | remove:"'" %}
{
   "ticket": {
      "subject": "{{ ticketTitle }}"
   }
}

I hope it can help someone with same need I had.
