Connect allows you to use templates to avoid repetition and also allows you style emails to fit your custom branding.
Note: This template only works with HTML emails. It does not work with WYSIWYG emails.
You can access our template builder on the Email settings page, by clicking Settings icon (), then clicking Message Settings > Email.
Here you can copy and paste any HTML and CSS you would like to include within the email template. You can then preview the template at the bottom of page.

If you are referring to conditional statements, then yes, you may add them to your template HTML. You may refer to this article for more information on this: Using the email editor.

I am planning on sending through Mandrill. Is it best if I use the mail chimp email template editor? Or is it best if I use the Zen Desk email template builder?

There would be no issue using MailChimp Editor over ours or vice versa. In truth, whichever would give you the easiest path to creating the campaign you are looking for is the one you should use.
Am I supposed to have just one template or the possibility to create many templates and then choose the one to use when creating a campaign?
Currently I am only able to find one email template following these instructions, but in the Using the email channel -article many templates are mentioned. Am I restricted to one because of trial?
the author states that you can preview the email at the bottom of the page, but where? I dont see it on my editor.

The Connect product this article is about is no longer adding new users so you won't see the options described unless you are legacy user of it. The generally available options for email templates in Zendesk are described in Customizing templates for your email notifications.
