I am trying to set up or use the voice function in my account but I am not sure if I have Talk or Sell Voice. What is the difference between the two voice functions?
Talk is the voice function within Support that allows your customers and agents to place phone calls within support tickets. See below for an example of the Talk console from the top right of the Support interface:
You can also place Talk calls directly from a Support ticket to add the call to that ticket:

Sell Voice allows you to call leads and contacts directly from Deals within the Sell product. For more information on setting up Sell Voice, see the article: Enabling Sell Voice.
