Auto fill a field based on the create time

    This won't work in the Zendesk browser UI only.

    However, you might use a call to a target to deliver the ticket ID to an API program that then takes the ticket's creation time, derives the shift, and fills your shift field.

    I don't know how quickly you need this field to be available, but, if it's not a matter of live or die, you might be able to do that with an offline API program that you kick off several times a day, say, once every hour of half an hour.

    This code would start out by retrieving tickets that have arrived since its last run, and fill the shift field on each one. Using the audit API, this is really simple.
