This is Tatiana from the Zendesk Advocacy Team. I understand that you're wondering if you can use Zendesk as your Identity Provider in setting up SAML SSO. The certificate fingerprint you're looking for can only be provided by Identity Providers such as Azure, Okta, onelogin and a lot more. Zendesk is a platform that provides customers with an option to use SSO to login but we don't provide the services needed as an Identity Provider.
