I have been scheduling articles for a specific day and time in advance: March 31st 8am. However, when I look at the little green box (as seen above), the date and time published are off by an hour. It shows:

Should I instead be scheduling everything for 7am?

Andrea Rodriguez did you check the timezone when you set the schedule?  Maybe you could you attach a screen capture of the screen where you set the schedule and if it looks like a bug we can progress with the engineering team.  Thanks!

    Hey Sophie,
It's all pacific standard time, but one thing I did notice just this morning (and is included in the screenshot I provided so you can see) it says "PDT". I looked that up and it's Pacific Daylight Time. We are scheduling our articles about a month and a half out and it looks like we hit daylight savings time, so it makes sense why it would be off by an hour!

Ah that makes sense!  Thanks for letting us know though, I will update the documentation for GA to mention that you'll need to consider daylight savings differences when scheduling dates.  Thanks again!
