You can build a custom report in Google Analytics and look at the button click events: https://support.zendesk.com/hc/en-us/community/posts/360003215947-Google-Analytics-for-Chat-in-the-Web-Widget
There are no reports inside of analytics that would give this data today.
If you don't use Google Analytics, you can use the following API to send the 'on open' event to whatever analytics provider you use: https://developer.zendesk.com/embeddables/docs/widget/core#on-open
