Tracking outbound emails sent through zendeskAnswered
are we able to pull a report on outbound email sent through zendesk based on subject title? Is there a way to track open rates on these zendesk outbound emails?

Zendesk Support doesn't have this capability built in, but there is a paid third-party app available called Read Receipts – see the official comment here for a link and a discount code: Track Email Opens
Zendesk Sell, which is designed for outbound sales efforts, does have this capability as a standard feature: Monitoring email open rate and link clicks
If someone's still looking, Email Tracking can do such a job for Zendesk Support, too. It displays the open, reply, and bounce rates; also shows the accurate time when the email was opened.
