There are several OLD threads about recovering or viewing deleted tickets. If at the very least we could VIEW deleted tickets we could see what was deleted by accident and re create it.

I have a report set up to show me deleted tickets. You would need a level of Zendesk that has Insights, though...

I tried to make a view and looked through insights but didn't see how to do that. I can't find an option for status "deleted". Can you elaborate?

Yup!
I'm personally only looking for the IDs of tickets that have been deleted, but I imagine that you could pull in additional attributes.

Can we search for deleted tickets yet? I accidentally deleted a few tickets and I'd like to get them back, please!

The search in Support will not show deleted tickets.
Instead there is a 'Deleted Tickets' view that lists tickets deleted in the last 30 days. You can recover the deleted ticket from that view but after the 30 days, tickets cannot be restored.
If you cannot see the Deleted Tickets view, your permissions are restricting access. Ask your Zendesk administrator to change that. This article gives details depending on your plan.
