How to edit mobile sdk client id and app id from old instance to new instance

We recently procured a new Zendesk instance and want to use the old Zendesk url, app id and client id on the new Zendesk instance. 

These fields are greyed out, is there a way to have then edited from the backend or is there another alternative of doing it.

You can rename your account subdomain for the old account, so that you have the ability to replace the new account with that subdomain name.  But the app ID, client ID, etc. for the your mobile app's registration will still be different in the new account.  Your mobile app will need to be updated with the new values.
