Feature request: Labels or Read-Only for text as field option
There are fields in People, Organization, Ticket that we do not want admins or agents to edit manually as the information come from Actions or API. It should either be a field of type Label or if you could set the text fields as Read-Only.

For Ticket Fields in particular, I've been using the Ticket Field Manager app found here (https://www.zendesk.com/apps/support/223753/ticket-field-manager/) to restrict specific ticket fields to be read-only.
I'm hoping Zendesk will release a similar app or built-in feature of Organization/User fields as well as I definitely think that could be helpful, but wanted to share that app in the meantime. :)

I see the option for Ticket fields. But the request is about People and Organization. No such Read-only property exist.

Ah, my apologies! I had read the first line as you wanting this functionality for People, Organization and Ticket fields, so just wanted to share that app for the Ticket fields use case in particular in case you hadn't heard of it yet. I personally found out about it a few months back through another Community Member. :)
